Double-Melon Fruit Salad with Home Made Nut & Seed Milk

Method

Nut & Seed Milk

  1. Blend the coconut and some sunflower seeds with a 150ml of water in a blender.... then add another 600ml of water and blend again
  2. Let the milk settle slightly for 2 mins.
  3. Then pour 50% from the top into another container for later use - store in the fridge
  4. Pour the remaining milk with nut bits into a mixing bowl

Fruit Salad

  1. Deseed the pomegranates
  2. Blend the piel de sapo melon and strawberries (3 parts melon to 1 part strawberry) to make a sauce
  3. Mix the coconut milk with the sauce
  4. Cube the apples, pears, grapes, melons, strawberries and add to the coconut milk sauce
  5. Add the pomegranate seeds, blueberries and raisins to the coconut milk sauce
  6. Mix the fruit and nut milk mixture so that all the fruit comes into contact with the milk to reduce colour change
  7. Then serve as shown in picture below
