Ingredients
Fruit Salad
- Apples
- Pears
- Pomegranate
- Cantaloupe melon
- Piel de sapo melon
- Seedless red or black grapes
- Scottish strawberries
- Blueberries
- Seedless raisins (red or black)
Nut & Seed Milk
- Coconut
- Sunflower seeds
- Water
Method
Nut & Seed Milk
- Blend the coconut and some sunflower seeds with a 150ml of water in a blender.... then add another 600ml of water and blend again
- Let the milk settle slightly for 2 mins.
- Then pour 50% from the top into another container for later use - store in the fridge
- Pour the remaining milk with nut bits into a mixing bowl
Fruit Salad
- Deseed the pomegranates
- Blend the piel de sapo melon and strawberries (3 parts melon to 1 part strawberry) to make a sauce
- Mix the coconut milk with the sauce
- Cube the apples, pears, grapes, melons, strawberries and add to the coconut milk sauce
- Add the pomegranate seeds, blueberries and raisins to the coconut milk sauce
- Mix the fruit and nut milk mixture so that all the fruit comes into contact with the milk to reduce colour change
- Then serve as shown in picture below
