Ingredients
- Courgettes
- Cucumber
- Tomatoes
- Coloured Capsicums/ Peppers
- Pomegranate
- Nuts and seeds of choice (I used split cashews, almonds, sunflower seeds and pumkin seeds)
Method
- Grate the courgettes and cucumber into a mixing bowl
- Slice tomatoes and add to the mixing bowl
- Cut the capisicums/peppers and add to the mixing bowl
- Add lime juice and mix thoroughly
- Dish out into serving bowls
- Decorate with nuts and seeds
- Enjoy!
