Veg Salad with Stuffed Peppers and Chutney

Method

Salad

  1. Grate the cucumber into a bowl
  2. Add cubed tomato, butternut squash, capsicum and avocado to the bowl
  3. Cover the mixture with lime juice and mix thoroughly

Chutney

  1. Grind sesame seeds, cumin seeds, ajwain seeds, cinnamon, clove & a few fenugreek seeds. Add these to the blender
  2. Blend the ground spices with fresh coconut, butternut squash, lime juice, chilli powder, amchoor powder and 1-2 teaspoons per person of linseed oil (Omega3 rich). Put this mixture into a mixing bowl.
  3. Then add some home grown finely chopped purple beans to the mixing bowl and sprinkle more sesame seeds and mix well

Stuffed pepper

  1. Slice each pepper into 2 equal halves and remove the seeds
  2. Fill each pepper half with the chutney and garnish with a slice of cucumber on top

Serve the salad and stuffed peppers on a plate with the chutney (garnished with more sesame seeds) on the side
